Hoppitty Cricket Protein Balls

This chewy, chocolatey recipe is a fabulous way to introduce Grubs Up Organic Cricket Protein Powder. It will put a spring into your step and is so delicious you will have the doubters eating their words.

24 (300g) soft dried figs

1 + 1/4 cups (200g) blanched almonds

1/4 cup (25g) Grubs Up Organic Cricket Protein Powder

1 tablespoon vanilla bean paste

1/4 cup (50g) white or black chia seeds

1/4 cup (50g) raw cacao powder

1 cup (160g) unsalted pistachios
Place the figs, almonds, Grubs Up Organic Cricket protein powder, vanilla, chia seeds and cacao into a food processor.
Process for 2-3 minutes until the mix comes together and forms a ball.
Add the pistachios and pulse until they are roughly chopped and mixed through.
Scoop a tablespoon of the mixture and roll into even sized balls and place on a tray.
Refrigerate for two hours before serving, or place into an airtight container for use within two weeks.
